Traditional Russian Olivie Salad «Оливье»

 One of the most popular is the famous Olivie Salad. A quite solid salad that very well fits to be served as a standalone dish. Everybody has their own version like mom used to make. I have 1 secret ingredient that I add. You can replace the bologna with cold Ham, Beef tongue or Chicken – as with many popular Russian recipes, there is plenty of variations.

 Ingredients:
6 large yellow potatoes
5-6  carrots
1 lb Alex Meat bologna 
10-12 eggs
1 large sweet onion
1 can sweet peas
5 small baby dill pickles 
1/2 stick melted butter
1 cup mayonnaise
1 cup sour cream
Salt, pepper, vegeta
Dill, green onion on top (optional)
Boil potatoes, carrots, eggs until ready.
This is the best brand for this salad. If you can find European store it should carry this bologna.
Its much faster to use vidalia chopper.
Cut everything in small cubes.
I start with potatoes. Add vegeta and pepper.
The secret to best tasting olivie is melted butter over potatoes. Mix well.
Pickles I don't put a lot so it would not be sour.
After you are done cutting everything  mix well with mayo and sour cream.
Taste if you put enough salt. Top it with green onion.

    1. This salad should be enough for 15-20 people party. It's about 20 servings I think, depends how you count. It lasts 2 days in my house of 6.

  2. This salad looks absolutely delicious and I love the addition of the bologna. It was interesting to see it could be made with beef tongue. Now that's an ingredient you don't see used much. :)
